Venetian fritters…with custard!

In Venice, Carnival is one of the most beautiful times of the year and is characterized by a truly unique charm.

The “calli” (streets of Venice) are crowded with the traditional colorful masks and the intese scent of the Venetian sweets fills the air. There is evidence of the Carnival festivities since 1094, under the doge Vitale Falier, in a document reporting the public celebration in the days before the Lent. In these days the world seems to have no restrictions and all the wishes come true, there was no thought or act that was not possible.

Among the typical Carnival sweets we can find the Venetian fritters, that we suggest in the delicious version with custard. If you follow the recipe step by step, the result is guaranteed…and the organic Valdobbiadene Prosecco Superiore DOCG Extra Dry is the perfect pairing!

Ingredients:

• 400 g Flour
• 100 g Sugar
• 30 g Butter
• 200 ml Milk
• Vanilla Flavouring
• 1 cube (25 g) baker’s yeast
• Custard
• Organic peanut Oil for frying
• Salt
• Powder Sugar

Instructions:

1. Malt the yeast in warm water.
2. Add to the melted yeast the flour, the butter (softened), the sugar, the milk, the vanilla flavouring and the salt.
3. Mix it well until it appears amalgamate.
4. Cover the dough and let it rest for about one hour.
5. Heat the oil.
6. With damp hands take a little of the dough and make the fritters, they should look like small balls.
7. Drop the fritters in the boiling oil and fry them until they will be golden brown.
8. Fill the fritters with the custard.
9. Sprinkle with powder sugar and enjoy them!
